Hi Paul,
I am currently a student at Paul Smiths College working on my senior project. It's a study concerning techniques servers may use on their tables to increase their own tip profitabilty. Its a continuation on a study conducted by Cornell university, however they focused on a casual dining setting rather then fine dining- so i'm currently in search of fine dining servers : )
