Nourishing Mondays: Laab (Thai Chicken Salad)

I have always been fascinated by the culture of Thailand, particularly its flavorful and diverse cuisine. Thai food is known for balancing four key flavors: salty, spicy, sweet and sour. This flavor palate comes from ingredients like chilies, citrus, garlic and fish sauce. Authentic Thai food is made from the freshest ingredients, and is always meant to be shared.

One of my favorite Thai dishes is called Laab. It is basically a spicy salad made of meat, herbs and lime juice. Though very simple to make, the flavor is deep and complex. Try it for yourself!

Ingredients:

1 lb ground chicken
3 Tbsp sliced shallots
3 Tbsp sliced spring onion
¼ cup fresh mint leaves, sliced
¼ cup fresh cilantro, sliced
3 Tbsp ground rice powder (you can use breadcrumbs if more convenient)
2 Tbsp chili powder
¼ cup lime juice
2 Tbsp fish sauce

Directions:

Cook chicken in a large frying pan until fully cooked. Let the chicken cool for 5 minutes. In a large bowl, combine the meat with the remaining ingredients. A Thai food tip: add herbs and liquids gradually and taste as you go, until the flavor is to your liking!

Serve on top of iceberg or bibb lettuce leaves, and garnish with more mint. Enjoy with rice.

Serves 4.
