Sorry I've been gone for a bit, that is, if you've been waiting to see what's next up my sleeve in the "Rants" dept.
But I've been occupied with a prospective employer, and it looks more promising than anything else directed to me.
I received an e-mail a week ago last Saturday from an employer whom I submitted the usual resume and cover letter asking me to call for an interview, send references and list of dishes developed via e-mail.
A bit strange, if you recall my rant about "learning to interview properly," I was concerned that this may be someone just trying to get a bit of info without "going through the whole rigamarole."
So I obliged, I didn't read the e-mail until Sunday (Friday was a lazy day) and promptly sent the e-mail info, noting that I wouldn't try to contact him until Monday since Sundays in restaurants are usually quite busy and it's not proper to call then.
I left him a voicemail Monday, he called back Tuesday, I interviewed with him on Wednesday. I thought it went well, and he asked me to keep my schedule open for an audition. OK and OH BOY! Auditions are not the easiest thing in the world, believe it or not. If you want to land the job, you need to think about dishes that are appropriate to the location, not just what you want to do to impress them!
Believe me, there are chefs out there who can cook Massumann Curry like no one West of the Gulf of Thailand, but they fail in producing as simple as meatloaf! I wanted to present to my tasters (two of the three owners, the chef of the establishment I was cooking in, as well as the location's GM) dishes that were compatible with the theme (concept) of the restaurant but just elevate them slightly, and hopefully surprise!
I didn't fail, according to them. They were quite satisfied, as well as the Chef and one of his Sous Chefs (who are culinary trained, btw.)
This AM, barely into my second cup of coffee, (4-5 are normal for me) I received a call from the location's GM where I'm being considered, and he wants to meet me. This can only be good. I have to leave soon, and I need to think about my questions for him.
So this may we the end of "Unemployment Part blah blah blah," but I like writing and ranting, and I thank everyone who has given me any feedback and advice.
