Restaurant Service and Waiter Training Tips

Restaurant Service Consulting, by definition, is a review or evaluation of the restaurant dining room service system. This means, "how the dining room runs" which includes all of the service tools provided (or to be provided) by the management.

Start with the basics, the business basics...

Independant operating restaurants are constantly surprising me with their business operations. I would be interested in doing a research profile on how many of my customers actually do a monthly inventory (weekly?), track their labor costs related to sales (revenue/labour hour), or even understand their margins item to item.

This is a common theme among restaurant dreamers.

"I know how to cook & I have alot of friends & my husband can operate the foh because he…

Running Tabs could incur in new Visa Fees

Effective October 2009, Visa will implement a new fee called the Misuse of Authorization System Fee. In light of this new fee, we are advising F&B establishments (F&B) to evaluate their current procedures for running a tab.

Visa's Misuse of Authorization System Fee simply stated will be charged when a merchant obtains an approval code and doesn't use it. Visa will assess a $0.045 per occurrence.

With this new fee, F&B should research how their POS systems… Continue

Train Managers to Watch the Clock

By David Scott Peters

I was recently interviewed as a restaurant expert about how to keep restaurant employees from riding the clock and robbing restaurant owners of precious labor dollars. It struck me as great information for FohBoh as well.

In some restaurants, there are employees who have more than one job code, or job role. Employees may try to take advantage of this and clock in with the higher-paying job code for the lower-paying… Continue

Your POS System Is More Than an Expensive Cash Register

When it comes to point of sale (POS) systems, a common problem among restaurant owners is they buy an expensive system, but then don’t use any of the time-saving and valuable reporting features. Instead, they use it like an expensive cash register.

POS systems can do a lot more than ring up and cash out orders. The following are features found in most POS systems (please note: some of these features are add-on modules, depending on the vendor):

• Finding your… Continue

Integrating valet service with the POS

We recently set up our system to include communication with the valet and I was wondering what others out there thought about this?...

By the server asking for the valet ticket when they return to the table to collect payment and entering the ticket # at the POS, the valet receives notification to retrieve the customers car.

With only a few extra touches at the POS terminal, the servers are moving the tables faster upon payment and the feedback from the customers has been… Continue
