#NRAShow - 2011 perspective

I am not sure what the final attendee count was, but my guess is more than last year and far less than 2008, when attendance was close to 55,000 over the four days. Like most things that occurred before 2008, NRA's annual event is what it is, rather than what was.

Attitude is what I tend to focus on most. Because I network and communicate and listen to what people are saying, my sense is that this year, the general attitude was great. Industry stakeholders were engaged and willing to…

GTB is ServSafe Certified!

I’m extremely proud to say that our entire bagel crew is ServSafe certified. It’s a requirement of both DC and Montgomery County that at least one certified food service manager is always on the restaurants premises. This is very important. The things that has bothered me for years is the dominating mentality of only the people in the position of “management” were certified! The people that do a large majority of food handling and cleaning are not…

Top Chef contestant Carla Hall - up close and personal - video

Before Top Chef, there was the premiere of the Food Network's Food Fight series at the French Embassy and that is where I first met Carla Hall. She had been a Washington, DC competitor and I, a Baltimore competitor. She was teamed with Chef Janis McLean and they won their competition. For the Baltimore competition, I was teamed with Chef Nona Nielsen-Parker, unfortunately we didn’t quite have the same results.

A crash course in food safety

Recent outbreaks of salmonella in the food supply have brought the restaurant and foodservice industry into the media spotlight. News of illness and recalls associated with spinach, tomatoes and jalapenos has been a serious cause for concern to those who make their livelihood in the foodservice industry. Yet, however widespread it appears to be, according to the National Restaurant Association, the U.S. food supply is the safest in the world.

While recent events have proven it is often…

Midyear trend update

It seems like only yesterday that the National Restaurant Association revealed the results of its second annual "What’s Hot… What’s Not" survey. But, in fact, it was near the end of last year. (Cliché alert!) How time flies!

TED TALKS VIDEO

TED: Matthew Carter: My life in typefaces - Matthew Carter (2014)

Pick up a book, magazine or screen, and more than likely you'll come across some typography designed by Matthew Carter. In this charming talk, the man behind typefaces such as Verdana, Georgia and Bell Centennial (designed just for phone books -- remember them?), takes us on a spin through a career focused on the very last pixel of each letter of a font.

TED: Jeremy Kasdin: The flower-shaped starshade that might help us detect Earth-like planets - Jeremy Kasdin (2014)

Astronomers believe that every star in the galaxy has a planet, one fifth of which might harbor life. Only we haven't seen any of them -- yet. Jeremy Kasdin and his team are looking to change that with the design and engineering of an extraordinary piece of equipment: a flower petal-shaped "starshade" that allows a telescope to photograph planets from 50,000 kilometers away. It is, he says, the "coolest possible science."

TED: Norman Spack: How I help transgender teens become who they want to be - Norman Spack (2013)

Puberty is an awkward time for just about everybody, but for transgender teens it can be a nightmare, as they grow overnight into bodies they aren't comfortable with. In a heartfelt talk, endocrinologist Norman Spack tells a personal story of how he became one of the few doctors in the US to treat minors with hormone replacement therapy. By staving off the effects of puberty, Spack gives trans teens the time they need. (Filmed at TEDxBeaconStreet.)

TED: Jennifer Senior: For parents, happiness is a very high bar - Jennifer Senior (2014)

The parenting section of the bookstore is overwhelming—it's "a giant, candy-colored monument to our collective panic," as writer Jennifer Senior puts it. Why is parenthood filled with so much anxiety? Because the goal of modern, middle-class parents—to raise happy children—is so elusive. In this honest talk, she offers some kinder and more achievable aims.
