Biography
I've been in the food service industry for quite a few years now, working my way up from a janitor to an assistant manager. I'm currently working as a line cook, with the intention of running my own kitchen and possibly owning my own restaurant.
My background is in Mexican food and baked goods, but I'm working on diversifying my skill set.
I learned to cook in Taos, New Mexico, and moved to Austin last August, where I hope to get into culinary school, and move in the direction of a managerial role.

On Tilapia

Here's a rundown of tonight's supper. I haven't done much with white fish recently, but all in all, this turned out so well that I ate far more than I needed to.



Golden Creole Tilapia -

Very Simple here, I took some fillets and rolled them in a seasoned flour, with pepper, granulated garlic, paprika, dry parsley, dry mustard and a pre-packaged mix of creole spices and salt.
