Biography
Sean Brennan mastered the elusive art of front-of-the-house service when, he would accompany his mother to their family’s restaurant every morning, pull out chairs for the women and greet customers with a hearty “Enjoy your breakfast!” He was three-years-old at the time. Since then, he has performed virtually every role in a restaurant imaginable, from dishwasher to manager to his current incarnation as a food industry writer and founder of MSB Creative Restaurant Consulting.
Sean’s passion for fine food and a superior dining experience is matched only by his relentless drive to perfect the systems and training methods he creates for his employees and clients. This commitment to service excellence was instilled in him from birth.
“My family had exacting standards and the phrase most often used was ‘The customer may not always be right, but we will never let them exit this restaurant believing anything other than that they are always right.’ My father’s,
grandfather’s and great-grandfather’s legacy is mine, and I am very proud to carry on their tradition of excellent service.”
Over the course of 30-plus years in the hospitality industry, Sean has worked in intimate family-owned restaurants, large corporate establishments, themed concept eateries, union-controlled hotel outlets and historic fine dining houses. The diversity of his experience has allowed him to observe and experiment with a number of techniques for training staff and running a business, discarding the less successful methods and refining the best.
MSB Creative offers a range of services tailored to specific business needs including:
• creation of brand recognition and service philosophy
• staff training in service and standards
• service evaluations and secret shopping
• wine and spirits education
The MSB Creative Restaurant Consulting philosophy is a simple one. Sean asserts, “All roads lead to excellent service. Many restaurants fail because service is not properly considered from day one. I firmly believe one must plant the saplings of excellent service before the rains come and that by doing this, you will spend less time in the future repairing any damage the treacherous storms mediocrity and complacency reap, and have more time to harvest the sweet fruit of success that your restaurant promises.”
Sean is currently writing his first book further illustrating his philosophy on service excellence titled Miracle Growth! Organic Ideas for Your Restaurant’s Sustainable Future due to be completed in late 2009.

Thanks Doll! I'm at the folks planning, shopping and cooking for Passover. It's so weird this year that it's more then a month after Easter. Samplings last day is April 27th! major renovation. Projected turnaround is 90 days. I'm figuring on closer to Sept. 1st. I am so excited to get the summer off and do some auditioning and maybe take a wine course. I'd love to get together after the Holiday. Much Love and thanks for asking me to join.

This picture is of my grandfather and great-grandfather in the mid 1930's at the Miami Beach Club in Miami, Florida. My grandfather is behind the bar with the shaker. My great-grandfather (cut out of this photo for space) was the Maitre'd until the late 1950's.
