Biography
It's one thing to import fine saké from Japan, which we have done for more than 15 years. But it is a whole other commitment to set up a Kura (saké brewery) and focus on crafting the finest saké made in America. From our home in Oregon, we brew premium Junmai Ginjo styles in a range of distinct saké profiles from a dry and crisp Tanrei (Momokawa Silver) to the other end of the scale with a cloudy and rich Nigori (Momokawa Pearl), or an undiluted Genshu (G Joy). In addition to the classics, we stepped out of convention and began bottling flavor infused saké under our Moonstone brand nearly 12 years ago when we first began brewing Oregon craft saké.

We're starting to add a variety of process videos from rice steaming to hand filtration of our Momokawa Pearl Nigori. Check out what's loaded and keep checking back. Great way to learn the process of brewing saké. Only thing better is visiting us in Forest Grove, Oregon and seeing first hand how it goes.

While exposure continues to grow and information is on the increase, saké is still highly misunderstood and under utilized in food pairings, cocktails, cooking and ultimately on wine lists where it provides an incredible option for unique food pairings.



Our friend Beau Timken in San Francisco works hard to explore saké and food pairings with cuisine from around the world and to our delight there is quite literally a saké for every flavor, dish and meal. So why has saké not yet moved… Continue

So a long awaited experiment is underway in our Kura's tasting room and if you are in the Portland area you get to be among the few to weigh in on it. We've hooked up the kegerator with nitrogen on one tap to push organic junmai ginjo nama gensu saké (pure saké, rice milled to 60%, unpasteurized, undiluted) and we hooked the other tap up with CO2 to push Moonstone Plum (result - carbonated plum saké). Both are getting rave early reviews but we need all the feedback we can get. Come on out.

Experimenting with draft nama saké in our tasting room. Phenomenol results so far. It is actually an organic junmai ginjo nama genshu saké (pure saké, rice milled to 60%, unpasteurized, undiluted) we call G Raw. Wonderful. If in the area please come out and give it a try.
