I haven't been on this for a while as you all know sometimes there is no time to take a dump when you work for this industry, and that is exactly how one feels, George Orwell? see the Dr seuss show or read the book "The Lorax" Well anyway's I had a superior, really? a superior? more on that word later..tell me he doesn't give a shit where the food comes from! Brazil, China wherever as long as it's cheaper, even though the food cost was 11% with organic meat, locally produced etc, not good…See More

Biography
Having been in industry since 1983, trained Four Seasons Hotel worked in almost every type of restaurant, from pizza hut when going to Malaspina college to first job at earls in 1985, to working in Cabo San Lucas at the "palmilla" Owned a gelato company and a restaurant brewery in La Jolla California, private chef in malibu.lived and set up a restaurant in phoenix. Vancouver is my home once again and am always seeking opportunities.

Hi Robert,
So far this site has lots of corperate banter but not enough chef to chef.
I've been in the buisness most of my life. My parents had a roadhouse when I was young.
The company I work for is local to Barrie and we have four locations. Two historical buildings that we run as fine dining steak and seafood, and two bars/nightclubs on the downtown strip. we are currently developing a fifth property and so far are leaning towards an upscale creole cajun theme. I have been working for Porterhouse for the past four years. Unfortunatley I have not gotten any farther west than northern Ontario
As for the weather... the snow is only just starting to melt. Spring can't come soon enough.
West coast is always ahead with food, so what's hot out there for this spring?
