I have to say in response to competing with the large chains, I can't agree with you. I think large chains are becoming antiquated and outdated. I would rather go to a different city and have food that is authentic to the area, not one size fits all. I like your idea and I wish you much success. Also, I noticed that there are a few comments below about organic I met one of my fellow organizers yesterday who makes organic deserts and candy. She is here in Indy, not to far to get quality food.

No worries, I think we have all done the same thing. Thanks for the congrats on the wedding. Went down to Savannah at the beginning of December for that.
What type of restaurant would you like to open? I miss Detroit for the fact that there are so many great places to eat and all sorts of cuisine. Check out my website (you can get to it through my FohBoh page. It will highlight the places that I worked while living in Detroit.
