Patti Hauffe: I am sorry - you know I love all my chef buddies, but "Hell's Kitchen" is a joke. It does nothing but make a mockery of the Restaurant Business, chefs, servers, clients &all concerned. No one would take the most well experienced chef into a new kitchen & not orientate them and expect a full service given.Just like throwing a non swimmer in the deep end of the pool and say sink or swim!

Interesting info regarding the AIG bailout-more fuel for the fire...

Posted on April 29, 2009 at 7:45am 1 Comment

Remember when this economic crisis hit, and Congress let Bear Stearns go

under, pushed a bunch of forced marriages between banks, etc.?

Then they bailed out AIG. At the time didn't it make you think... "That's strange.

What does an insurance company have to do with this crisis?"

Well this could just be the answer...among other things, AIG INSURES THE PENSION TRUST OF THE UNITED STATES CONGRESS!!

No wonder they got bailed out right away!

Heck with… Continue

Patti-The sun's trying to peek out for the first time since july 17, a great day for foraging wild blueberries and boletes. I've lived in small towns where these ingredients were only availabe or cost effective by picking them myself, I first did this as a child and then with a degree in horticulture and plant pathology. I love to use these things to create interest and to set my food apart.. PLus its nice to get out of the kitchen and into the woods, I.d love to talk with other forager chefs.. ANNIE

Lots of boletes, processed and frozea dozen bags of them for game dishes, sauces or just for aquick topping for steaks! There's a lot of blueberries right now, both hi-bush and low bush---its a happy time in God's little garden. Its good to hear from you. Annie

Hi Patti,

The nearest thing to stone fruit infused oil that I supply would be our Fruit spice which we can infuse into macadamia nut oil. It has a berry/passionfruit character with a hint of spice.

We do have macadamia nut oil infused with a wide variety of essential oils from lemon myrtle, forest anise, mountain pepper, forest peppermint, mintbush and the fruit spice I mentioned above.

You can try some of these in my range of Splashes which I have in Whole Foods Markets nationally and selected specialty outlets or on-line at www.cherikoff.net/shop. They are under the Vic Cherikoff Down Under brand and labeled as Daintree Drizzle, Coolangatta Splash, High Country Zinger and Outback Smoke.

Cheers,
Vic

Hello Chefs & ALL THOSE WHO EAT! How are you?

Here's a cute one I love to share - if you've heard it ...I think it deserves repeating -

I went to a restaurant that serves 'breakfast at any time'. So I ordered French Toast during the Renaissance.

Have a delicious day!
