Biography
Heilpern Hospitality, LLC is an operations consulting company. It is comprised of professionals spanning many years of diverse professional backgrounds and is directed by Jerry A. Heilpern. Jerry has spent more then 28 years in the hospitality industry. He has participated in a Chef’s Apprenticeship at the age of 18, has a degree in Corporate Finance and is currently an adjunct faculty member at the Art Institute of Atlanta in their Culinary Management Program, teaching and/or developing curriculum in management and supervision, Facilities and concept design, and dining room operations. Jerry has worked in senior management in both corporate and franchise environments with such brands as Applebee's, Vicorp Restaurants, Damon’s Clubhouse and TGI Friday's as well as with emerging brands such as The Waterfront Steakhouse and Fratelli Di Napoli.

Working in these environments we have developed business plans for the purpose of company acquisition and subsequent financing. We have been instrumental in menu & wine list development. We have worked with industrial psychologists and developed psychological pre-employment testing instruments for the hospitality industry. Working with the emerging brands we have written operations manuals including plate presentation books complete with food pictures. We have worked with renowned architects such as Bill Johnson of Johnson Studios in designing concepts and facilities. We have developed marketing plans in Customer Relations Management, which have included working directly with ad agencies, food artists and photographers.

We have developed equipment, smallwares and product specifications as well as management, accounting and operational reporting systems. We have also worked on human resource issues providing solutions in staffing, compensation & benefits as well as the development and implementation of training programs.

I was speaking to a group of young entrepreneurs the other day. We were discussing the difference between national chains and owner operators as it relates to average P&L performances. We began talking about the various reasons and causes for the big differences between their respective performances. But, there was one underlying issue that seemed to come up over and over again. I remember as a young assistant manager watching with dismay as employees, hourly and salaried alike, would walk by obvious issues/problems large or small and pass by without stopping to lift a finger to fix or help with anything. A long time ago (when I was still in direct operations) I was thinking about what I could do to be a more successful operator. I thought of the different roles I played in the course of executing my job. I thought of the perspectives of the guests. I thought of the perspectives of the employees and vendors. Recently an industry analyst at Goldman Sachs by the name of Steven Kron estimated that the restaurant industry especially casual dining was so over built that in order to for the laws of supply and demand to regain equilibrium that roughly 8% of the current restaurants now open need to close. Some Disconnects of Restaurant Financing

Every year it seems that I get at least a dozen or so projects that cross my desk which require financing. Helping clients with this aspect of their business is not outside our skill set here. However, their always seems to be a vast suspension of reality with these projects.
