A couple of ways that you could go
. Brian Stubstad served as the Director of Design for PF Changs ( including Pei Wei's and Tanecko) and I believe that he is currently consulting/freelancing. Brian is extremely creative and has won multiple awards for his work both with Changs and before. If your looking for more of a full service design/architectural firm, you might want to consider Aria Group Archirects (ariainc.com). Brian could hook up with architectural firms as well, so I suppose it just comes down to who you mesh with.

I did the Kona Grill at Cherry Hill, as well as a couple of PF Changs and California Pizza Kitchens in the area, so when you're ready, I might be able to help you with subs and or suppliers.
