DIRTY-DOZEN SERVICE-SIN CHALLENGE… If in one-hour of mystery-shopping your operation I don’t find at least 12 obvious Service Sins I’ll perform a 2-1/2 hour Service Training Gratis. 73% of the public return to food service operations due to Service, only 12% return due to Food.

BORN IN A RESTAURANT… I was born in a hot-dog stand that evolved through every phase of the restaurant industry to become the world’s largest nightclub serving over 6000 covers a night. I evolved with it (starting in the kitchen at 7-years old, bussing at 11-years old and Waiting at 16-years old) giving me the training and experience to truly understand that “Hospitality is a relationship & not a
transaction”.

I’m a unique hospitality professional whose true talents can only be recognized in person.
Years in the Industry
Since I was born in a restaurant I can claim that I have 70 years of hospitality experience

I’ve been writing for Print Magazines and E-zines for years and Catering Magazine even published a digest version of my book The A to Z’s of Professional Table Service over a two year period, but it’s really a sincere pleasure to be addressing my peers at FOH/BOH. I apologize to all of you at FOH/BOH for being out of touch for such a long time but I’ve been so busy working there’s been little time to work. For the last 33 months I’ve been working on a consulting basis for a large… Continue

Hello, Ian! I'd love any feedback you have on great training magazines. We are looking for innovative training ideas that focus on a blended learning approach. We are not, however, looking at E-Learning at this time...any print ideas?

Ian,
Thank you for your timely response. I, as you, have an insatiable schedule at times. Please allow me to introduce myself. I am a passionate servant of the dining experience. Finding my initial journey into this industry I found my way to the Hands of Michael and Tom Lachowicz, Le Duex Gros, to whom I am grateful for gifting me with a standard of excellence and servitude in all I do. I have had the opportunity to work and study under Anthony Adrian of Kokari in Palo Alto, and Isabella's. The past ten years have been a purposeful desire to learn more in this industry. My titles are only dictated by the task at hand. Currently I am seeking to learn more about International standards of Service and hone my skills at the table a bit. The past 3 years have mainly been in A consultant or Manager role. With that said I would like to inquire about attending your School, with the intent of making myself available to you if you were to open another location. I look forward to speaking with you in the future.
Best Regards,
John Irvine II
