The Cultivation Corps consists of David Dodson, Principal, and his network of facilitators, culinary artists, real estate professionals, operation specialists, food manufacturers, interior designers, architects, graphic designers and business plan writers.

David has dedicated his career to the development and expansion of restaurants and food manufacturers. His expertise in strategic change, concept formation, operational improvement and financial strategy has been honed through his work as a business leader, business partner to several creative chefs and consultant to restaurants, retailers and manufacturers.

He started his career as a chef and caterer, working his way into operations and leadership roles including leading Real American Restaurants where he managed 500 employees in three states. Rounding out his operational experience, David has also worked as an associate restaurant securities analyst for the mid-sized investment bank, JMP Securities in San Francisco, where he covered 15 publicly traded restaurant companies and the food industry as a whole.

Over the last 10 years David has been the business developer of restaurants like Tomatina, Gracie’s and Bistecca. He has worked with several renowned chefs including Chef Michael Chiarello. He has provided strategic consulting to companies like Whole Foods, The Mansion on Turtle Creek, General Growth Properties, Pizza Antica and Zao Noodle Bar.

His work includes several overseas assignments in Latin America, where he learned to speak Spanish fluently. And he has eaten his way across much of Europe and Asia.

David earned an MBA in International Business from Thunderbird, American Graduate School of International Management; a Bachelor’s in Hospitality Management from Florida International University; and an Associate Arts degree in Culinary Arts from the Culinary Institute of America in New York City.

Tracks Brewing Company is in its 8th year. Were looking for someone to join our company in a kitchen managing partner capacity. The state of Utah has just passed legislation removing one of the strangest laws on the books. That being the Private Club Law causing all bars to be private. This presents a great opportunity for us to finally become what we set out to be. A Restaurant Brewery by day and Sports Bar Night Club by night. Were in a very strong and emerging market with 4 new restaurants opening in the last 10 months.

Hi, David! I am thinking of doing what you suggest! I teach a course in restaurant development each fall in which teams of students come up with concepts, develop detailed marketing, financial, and facilities plans, and in the end attempt to attract imaginary investment capital from each other and from a panel of industry advisors. The amount of capital they attract is a component of their grade, so it's as "real world" as we can get it. Three teams from former years have moved forward with their concepts: one has been open for about a year (with a second unit under construction), one is in the process of opening right now in Maryland (www.punksbackyardgrill.com), and a third is just getting off the ground. Pretty cool!

Maybe some FohBoh users would like to serve as informal mentors to the student teams -- are you game? It would be a great experience for both sides, I think!
