Biography
Rockfish Seafood Grill hooked Daniel Stewart in spring 2006 as the company’s new corporate chef. Bringing with him more than 15 years of culinary expertise, Daniel, a classically trained chef, is instrumental in creating new dishes and launching new menus.
Daniel is a native of the Finger Lake Region of New York State and one of six siblings who at one time all worked in the food industry. Raised on a vegetable farm where steak and potatoes were a staple, it was not until later in life that he was introduced to seafood and discovered his passion.
After graduating the Culinary Institute of America (CIA), Daniel trained under Victor Gielisse - one of only 71 Certified Master Chefs in the world recognized by the CIA for achieving the highest and most demanding level of culinary certification.
Daniel then joined his brother’s (also a CIA graduate) cooking team at a Dallas country club and has spent his entire 17-year career in Dallas area restaurants and kitchens. His credits include the Plaza of the Americas Hotel, the Dallas Convention Center and the Morton H. Meyerson Symphony Center.
“Daniel is a good fit for Rockfish’s food and culture and quite a fan of seafood” says Rockfish President Troy Cooper. “He is a seasoned chef and is regarded for his commitment to fresh ingredients and fresh ideas.”
Daniel’s impact can be seen in plate presentations, food promotions and kitchen operations, but his key focus is menu development. Patrons have discovered Daniel’s appreciation for ‘the American bounty of seafood’ in many new Rockfish signature dishes.
A committed chef, Daniel is a member of the American Culinary Federation, the Texas Chefs Association, the Research Chefs Association and the Epicurean World Master Chef Society.
Married and with three children, Daniel enjoys reading, politics and church activities in his spare time.
