So here is a followup to those emails I sent out to the Wine Spectator 100 Greatest cheese list, as I tryed to begin to set my vendor list of suppliers for the new cheese shop in Acadiana

So I am shopping for cheese at Lafayette, La's Fresh Market. Low and behold I catch sight of the Sept issue of Wine Spectator and right on the cover is "100 Great Cheeses". I read thru the articles on cheese and begin to search for the cheeses in the markets cheese case. Funny, I can't seem to find but a couple of these "100 Great Cheeses".

Every story, every adventure, every day has to have a beginning. La Fromagerie d' Acadiana began with me having a crazy idea for a new cheese shop for the people of Acadiana.. Where they could come to sample, enjoy and buy the multitude of choices the fromage world can offer. Those choices that are not currently available at all, anywhere near here.

I'm a boring, old world conservative American when it comes to cheese. Old yallah cheddars, some white cheddars, smoked cheddar. I don't go blue and Jarlsburp is not my favorite.

Did I say I liked Cheddar ... and philly cream cheese, now who wouldn't like philly.

I like the boursin pepper cheeses and herb cheeses based on philly.

SAY CHEESE ! As a chef I have worked with all types some I love others no. European cheese to me are true cheese our pallets are spoiled with western styles of cheeses that are purchased in our local markets .
Working with the Disney Company I was introduced to a wide variety . Dana I see you are in NEW IBERIA Parish

My favorite Cheeses would be Cherry Gourmandise , Gouda smoked kings choice ,Asiago ,
Cammbert ,Stilton I can go on and on
Boursin Herb I use in a lot of recipes that call for cream cheeses , I make a shiitake &crab cheese cake thats to die for or so I have been told
Right now I am unemployed I know the cost of these products one case of boursin costs about $ 40.00
in this market things are tight and cheese can be down right pricey . Ten years ago when things were better I would have jumped right in . until I get back to work I am up a bayou without a pushpole

Thanks for the invite Dana. I am unemployed, but awaiting 3 months of food stamps, so I can probably afford a block or two of cheese once it comes in. Can't afford wine, but I've got the whine to go with it! LMAO
