I used to work in project control (risk management). They called me the "rough tough cream puff". I was usually the one that had to "be the bad guy" but I was always the one they called when they were in trouble - personally, professionally and otherwise. I once arrived at the office to find a shirt on my desk with my "new title" on it and others walking around the office with "I'm afraid of the Rough Tough Cream Puff" T-shirts over their suits...LOL

I feel a little reserved sharing my vulnerabilities on this site for anyone to see (as you can tell from previous correspondance,) I can, at times be a quick retort, which doesn't speak very highly of my ability to filter. You seem ( I have read reviews of your restaurant on the Web but couldn't find a website for the restaurant) to be someone with talent and passion, I was looking for more information (I realized how little I knew about your operation when I was realizing how unfair it was for me to be conclusionary before.) and I would love to talk more.
