Biography
Claudia Sutherland, President of When the Mood is Food, and founder of The Center for Culinary Arts and Development (CCAD), began her culinary career twenty-five years ago.
“ The Queen of Cake ” was the all-too-modest title bestowed upon her by the national press. Ms. Sutherland and her first business endeavor, Claudia’s Gourmet Foods, Inc., created high end desserts, appetizers and breads for the food service industry, the retail trade, the deli sector, and internationally for the mail order segment. Over sixty-five SKU’s were lovingly created by her and distributed nationally for ten years. Growing the company from a $10.00 beginning to over $2 million annually, Ms. Sutherland sold Claudia’s Gourmet Foods, Inc. to Royal American Foods in 1990.
Content to remain “retired” for one month, she traveled extensively, and absorbed the specialty cuisines of each new area. Returning to Minneapolis, she opened an international consulting firm, When the Mood is Food, specializing in product development, product packaging, sales training, trend analysis, competitive product reviews, focused ideations, and “culinary passion” classes. She conducts culinary awareness explorations around the world and nationally, to explore both the culture of the peoples, as well as their food techniques and native products.
Ms. Sutherland designed and built The Center for Culinary Arts and Development, (CCAD) August of 1996, completing this massive renovation over 18 months. This project of such scope and magnitude, of cutting edge design and equipment, required eighty-five craftsmen, thirty-two material and equipment vendors and a third of a million dollar investment to realize her vision. Her newly created International Teleconferencing Center opened to raves February, 2006. Equally as grand in scale, and imagination, this Conference area is complete with state of the art AV, and electronically links the upper level kitchen with the lower level theatre. The design and versatility of the new Teleconferencing Center is world class, allowing all programs conducted at the CCAD to be broadcast worldwide via internet. This entire venue is a testament to her vision, commitment, and passion for the food industry.
Ms. Sutherland has honed her cooking skills at the Ritz Cooking School in Paris, on the world famous Orient Express luxury train, the Cordon Bleu Cooking School in Paris, and with chefs worldwide. Two to three times a year, food adventures and cooking classes take her to such countries as Japan, Thailand, China, India, Nepal, Hong Kong, Singapore, Egypt, Israel, Africa, Turkey, Greece, the Philippines and extensively throughout Europe. These world adventures have created and honed an awareness of ethnic dishes, cooking techniques, and ingredients. She is living the food life, not READING about foods. This is the trait that separates her from other less qualified peers.
Past president of the Minneapolis/St. Paul Chapter of Les Dames d’Escoffier, a chapter Ms. Sutherland founded in 1995, she also served two terms on the Board of the International Les Dames d’Escoffier (LDEI). Her passion is well aligned with the mission statement of LDEI:
To support and promote the achievement of women in the culinary professions and to foster excellence through education and charitable activities. As a past executive on the advisory board of the National Baking Center in Minneapolis, she was instrumental in the pioneering process and the creation of the center, which was dedicated to artisan bread making. She currently sits as an Executive Advisor to the Culinary Arts program at Minneapolis Community and Technical College, beginning her second year in this position. Her contributions to national television spots such as HGTV and Kitchen Renovations, have earned her fans around the world. She is a member of the James Beard Organization and has served as a judge for these Culinary Awards the past five years.
Ms. Sutherland is recognized internationally for her generous culinary contributions and extensive knowledge and passion as it relates to the food industry.
