It is based on local ingredients, rice, seafood, fried anything, and comfort food veggies (think collards).
James Beard winner Louis Osteen out of Pawleys Island even opened an outpost of his restaurant Louis's Fish Camp in Las Vegas.
Something appealing about fried oysters and shrimp and grits to the masses I suppose.

oh yeah...nice fish, I'd reccomend a little chili and lime butter.

The brie stuffed filet sounds really good.
As an fyi, PEI has no sound. There's the Gulf of St Lawrence to the north, and the Northumberland Strait between the island and the mainland. No big deal, just thought I'd bring it to your attention.
