I'm not a coffee shop owner, but I do frequent them! I think it is wise to study what industry leaders are doing right and wrong when they relate directly to your business. If you can figure out why people drink their coffee... convenience,…

Credit Cards and You. And Your Customers.

Posted on April 19, 2008 at 6:12pm 26 Comments

Before I opened the cafe, I visited quite a few comparable restaurants and coffeehouses within about a 150 mile radius of here...and my number-one peeve was being told that I had to spend X-dollars in order to use my credit or debit card, and in one instance I was told that if I didn't spend X-dollars, there would be a surcharge.

Guess what?

According to MasterCard and Visa, that's a big no-no. In fact, it's such a big no-no, the person who made up these "limits" and… Continue

Lazy Chefs - Help With Dinner!

Posted on April 5, 2008 at 7:07pm 2 Comments

When you've been cooking all day and you're one step away from calling a pizza delivery service...what's a chef to do?

What is your favorite quick dinner go-to recipe that never fails you? What's your favorite comfort food that soothes you after a long day?

Mine is usually some form of baked pasta -- sometimes with a meat sauce (a leftover roast is great for this) and sometimes with a tomato sauce. Throw the sauce over cooked pasta, add a little stock to thin out the sauce… Continue

My Worst Dining Experience Ever...

Posted on January 29, 2008 at 2:04pm 2 Comments

...and I remember it like it was yesterday, even though it was actually a year ago. Almost to the day, actually.

It was the week of my birthday, and my son and I had walked downtown to shop. Since it was winter, it was dark early and I didn't feel like walking back home for dinner so I asked him if he wanted to eat in [insert seafood restaurant name here]. It wasn't peak dinner time yet, so I figured we could get a nice table, have a nice meal, and leave before the late-happy-hour and… Continue

What's Your Best Seller? And Your Worst?

Posted on January 20, 2008 at 1:39pm 4 Comments

No, I'm not trolling for recipes... :)

I thought it would be interesting to see what everyone's selling at a fast clip, and what menu items you're thinking about kicking to the curb.

My most popular cold sandwich would be the homemade chicken salad...the most popular hot sandwiches would be the spicy turkey and the Pigtowner (named after the neighborhood -- it's a hot ham and cheese).

My coffee customers seem to enjoy the basics -- drip coffee, lattes, and the… Continue

Never Let 'Em See You...Clean?

Posted on January 18, 2008 at 2:22pm 9 Comments

Of course I can't find the article now, but late last night I was reading online an article that listed the "Dos and Don'ts" of running a restaurant. One of the things the author flagged as a big "DON'T" was "DON'T let your customers see you cleaning. This should be done after hours ONLY."

I'm assuming they were talking about "real" cleaning, and not just wiping the tables or cleaning a spill off the floor, but I found it odd that someone would find that offensive in some way. I'm… Continue

Hello Carol,

I served as Executive Chef/Director for Samaritan (info below about SamHouse). There are two food service facilities within 1 mile from each other. I oversee both sites, 1 served breakfast to approximately 80-100 individual that are in various programs. The other location serves lunch to clients Monday to Friday participating in life stabilization program. The same restaurant is used for the public on the weekends and will soon be doing dinners and brunch in June.

Who We Are?
Samaritan House of Atlanta, founded in 1986, transforms lives by helping homeless men and
women achieve self-sufficiency through personalized employment readiness and life stabilization
programs. More about Samaritan House of Atlanta.
What Do We Do?
In just one year, Samaritan House of Atlanta:
•Serves 28,000 noontime meals to homeless men and women
•Helps 400 homeless men and women receive resources, training, and support to
re-enter the workforce
•Assists 100 chronically homeless men and women in securing benefits, housing, and mental health services
•Manages Community Voice Mail for over 550 mailboxes
•In partnership with Samaritan House Clean Street team, moved over 50,000 bags of trash to make Atlanta cleaner.
In addition, Samaritan House owns and operates the award-winning Cafe 458 serving
dinners Thursday and Friday 6:00-8:30pm and Sunday Brunch 10-3pm.
