Hello Burt! I have not quite gained the appreciation for duck that some of the other chefs in our group (www.crosswindcatering.com) have. They enjoy cooking many different games meats. Two of us at Cross Wind are going to the Spring Training with Paul Kirk again this year, but we are taking four new people to introduce them to REAL bbq. BBQ is not something that everyone does, not like steaks and such, so it is a treat most people don't get very often. Have you ever eaton at "Sonny's" down in the south? I really like their bbq beans. I am on the hunt for a good recipe.

Not that I'm bais on Ontario wines, but it's a family favorite.
I need to get into Toronto for an R&D day soon.
I use duck on most of my menus. Pan seared, in pastas you name it.
