Lamb Loin Chops With Garlic, Cilantro, and Saffron

Pick out some rosy, well marbled lamb loin chops and season them with sea salt and pepper. In a large zip top bag, smash and peel as many cloves of garlic as you can handle. Add a teaspoon of good saffron*, a handful of roughly chopped cilantro, and a half cup or so of good olive oil. Let marinate at room temp for two hours, or all day, turning to coat chops often. Castello di Nieve, finally a great Barbaresco I can afford. just like when Pinot noir hits its mark, Nebbiolo does the same.

Barbaresco tends to be a tad more forgiving than its Piedmontese counterpart in Barolo.

Sure I am a fan of Bruno Giacosa's barbaresco Santo Stefano, but I can't shell out the Lire for that. This is a dilemma for me because the snob in me really enjoys the best.
