If you're in the restaurant business, it's good to know the hard core facts behind what makes this wine match with that dish, this dish with that wine, ad infinitum.

I've had a few years of experience with the idea of food and wine pairings and I still feel that it's a personal palete thing....yes goat cheese does taste great with a nice zin but there are no hard-line rules. I also drink red wine with fish sometimes so again, no rules....It's all personal. Enjoy the wine whenever and add some great food tastes whenever you can. I have been to some fabulous wine dinners where the food and wine were ify at best...c'est la vie !
