On a second thought, Alessandra, let me direct you to two sites that may be a good place to start if you want some basic thoughts behind wine and food matching that you as a restaurant professional might find worthwhile. Go to www.wineloverspage.com/randysworld and click on "Basic Principles of Food & Wine Matching," which will give you the sensory components and foods and wines that determine the best possible matches. If you're in the restaurant business, it's good to know the hard core facts behind what makes this wine match with that dish, this dish with that wine, ad infinitum.

Then check out my www.culinarywineandfood.blogspot.com, which has some specific suggestions on matching wine with cheese, chocolate, barbecue, fish, etc. Then let me know what you think, and what else you're curious about; and I'd love to continue the discussion!

I've had a few years of experience with the idea of food and wine pairings and I still feel that it's a personal palete thing....yes goat cheese does taste great with a nice zin but there are no hard-line rules. I also drink red wine with fish sometimes so again, no rules....It's all personal. Enjoy the wine whenever and add some great food tastes whenever you can. I have been to some fabulous wine dinners where the food and wine were ify at best...c'est la vie !
