Anyone out there opposed to the growing number of half bottle, carafe, and by-the-glass offerings? Is there ever a situation where full bottle service is better than by the glass? Would especially love to hear from sommeliers, wine directors, etc. thanks!

I offer almost 50 half bottles in my restaurant, as well as 12 by the glass. I always ask a guest if they are planning on drinking 2 glasses. This now widens their possibilities. It really helps with the adding quality wines and keeping them fresh. If you spend $20 a glass of wine you want to know that it is fresh. Having half bottles helps that. The guests has their own small bottle at their table. They know that it was just opened for them. They never have to ask how long has this bottle been open.

The best part is that it help with the check average. I can easily double the amount that people spend on wine with a good half bottle selection.

I wish more places would offer half bottles.

Interesting question - I ran into a problem recently at dinner where we thought we'd ordered a bottle but were charged by the glass. When we protested we were told the per glass price was based on l/4 of a bottle's price - but we'd had the wine before and thought it was $10 less than what we were charged by the glass - confusing, distressing, and we left with a bad taste although it's a place we've enjoyed a lot in the past. Would like to see some kind of standard for charging by the glass that does not make the diner feel like they're paying a fortune for the privilege of having that option.
