I am not a vegetarian but have come to have a new respect for vegetables over the years - my late partner used to cook very classically and showed me how much the addition of diced veggies adds flavor to just about any meal. Since his death, I have come to appreciate that even more. As a foodservice journalist, I'm interested in knowing why more operators do not offer creative/alternative options for those who are vegetarian or vegan. I'd like to hear from those that do who are here in the Northeast (Maine to Pennsylvania) about what they offer, how they came to do that, and also, from those who don't as to why not!
