Okay...what is the name of the cooking technique that Hung used extensively in season 3? His duck dish where he cooked the duck in a sealed plastic bag at a specific temperature is the dish/technique I'm most curious about. Any help offered is greatly appreciated!

I think he used this technique several times during the season.

I think they called it soubise, but that is a sauce, not a technique last I checked.

Gotta love it. When she made the tomato and peanut butter dish I thought......Damn after all the hard work she had done she was packing her knives. I'm trilled to see that she won. The reunion next week should be fun. I think they are dish on Lisa for all her facial expressions.

chef blais choked! he said it " this is mine to win" , sorry to see him fall , but you know what they say-- your only as good as your last dish. wait if that is true his desert was the best and they should have picked him to win. however, his comment about choking put him on the chopping block. still a good showing. congrats to steph- the first female top chef.
