To Ken Cohen;
That Paco Jet is something I've just noticed on a couple of fancy sites. Seems to take anything frozen, and turn it into ice cream, or a mousse, or a granitee a the flick of a switch or two. Claims to be able to do 15 different flavors and styles in about 2 cup batches in an hour. Big buck machine though 4-5K I think.
Le Sanctuaire has them as well as lots of other fancy, pricey toys.

During this past weeks S.Fla. Food and Wine Festival. I ate at Doug Rodriquezes Ola restaurant. He made some kind of Tuna Ceviche w/ Uni Ice cream. Used something called a Paco Jet
Sounds strange but tasted quite good.
