Hey everyone; I checked for a Mexican food group here and was astonished to find none! I decided to remedy that situation immediately and promptly begin stealing dinner ideas from everyone who joins.
What's your favorite Mexican food? (Or foods--I mean, who can choose just one favorite?) And if you've got a pic, please include it. Right now, I've got kind of an odd pic I took of the beginnings of salsa verde, but I'm sure someone here has something better for the group pic.)
Since I'm the only member right now and I'm sort of talking to myself, I'll start...
I love the simplicity of frying up corn tortillas to make chips. Fry 'em whole and top them with refried beans and veggies (and the amazing avocado) and I'm in heaven! I heart chalupas. With a good margarita.
I don't really have a favorite Mexican restaurant or dish, but I really love great, fresh Mexican foods.
Don't laugh, but my favorite salsa / pico mix comes from Chipolte's. The corn salsa with jalapenos and cilantro! Hmmmm.
To me, the best of Mexican food contains fresh ingredients. It's not a recipe that contains taco bell refried beans. If the rice is fresh, if the tamales are fresh, if the salsa and picos are fresh and the tortillas and chips are homemade and right out of the oven, and the meats or seafoods are cooked expertly with Mexican spices and citrus flavors, the food is bound to be good.
You're absolutely right it is hard to pick one favorite...but may favs are:
appetizer = chips and salsa (spicy of course)
Main course = Chile rellenos (cheese)
side dish = guacamole
