Because of my job, I have had the opportunity to travel quite a bit. No matter was city or suburb that I'm in, I try to see what is available as far as Mexican restaurants. I am sure that I am not the only one that looks for great Mexican food during their travels. Where are you from or where have you traveled and what is the best Mexican restaurant in those cities, towns, etc.?

I'll start. I currently live in Louisville, Kentucky. We have several good Mexican restaurants. One of the best is called Ernesto's. Try it out if you get to Louisville.
Living in Austin, TX, I have access to a large amount of mexican restaurants of all kinds. Here's a short list of good ones. This is by no means all inclusive nor do I claim to be the font of knowledge for the Austin food scene. In no particular order.
Fonda San Miguel- high end interior Mexican food on the north central side of town. Great high end cuisine and great service. Don't come expecting chimichangas and queso. Well worth the prices.
Mi Madres- Killer Tex-Mex on the east side only open for breakfast and lunch. Great pricing, killer food and there's really good attention to detail. It's not the type of place that does a 50 item menu with 5 core ingredients and sauces.
Pollo Asado - It's a roach coach that is parked at the gas station on Martin Luther King Blvd just east of 183 on the far east side of town. Don't let the setting fool you into thinking it sucks. These guys do chicken right. Always moist, seasoned well and cheap as hell. A dishwasher of mine told me to go there after he said their chicken is way better than mine. He was right.

There's quite a bit more and I will add it as I remember specifics.
For a totally different (and very New York chic) Mexican restaurant experience - try La Esquina in the SoHo section of Manhattan. The food and the experience is other-wordly. Great place to go with friends & the cuisine is more Mexican-Fusion blended with some authentic dishes. Get the corn-on-the-cob appetizer to start & finish up with a nice smooth tequila - you won't be disappointed. Make sure you call for reservations 3 weeks in advance (yes, a Mexican restaurant that requires reservations!). http://www.esquinanyc.com/
