Flu Season is in full force and if that wasn’t bad enough we are dealing with a new flu bug, H1N1. H1N1 is a new strain from the seasonal flu family - Influenza A. Controlling this virus can be tricky when the H1N1 vaccine has yet to arrive at most health centers and a large percentage of people have poor habits when it comes to washing their hands with soap and water. Based on existing research from the National Restaurant Association (NRA), food handlers wash their hands with barely 30% of the frequency required by procedures recommended by the US-Food & Drug Administration (FDA).
We all need to do our part to help control the spread of H1N1 and the seasonal flu. I can’t think of a better way to send a not so subtle hint that your establishment places a high value on cleanliness by having instant hand sanitizers readily available for your customer to use. I've seen instant hand sanitizers located on every table during a recent trip to a local restaurant. If that isn't feasible, near cash registers and bathrooms are very important. Also, sanitizing and disinfecting hard surfaces regularly and at correct dilution levels can guard you, your employees, and customers against the spread of H1N1 and the seasonal flu.
EPA states: “Currently registered Influenza A virus products will be effective against the 2009-H1N1 flu strain.”

I'm a food server (at a very nice restaurant), and I can vouch for the statistic mentioned above. My coworkers don't wash their hands nearly as often as they should. We keep hand sanitizer close to all our waiter stations, but even still, I think there's room for improvement.
Short of making people sign off on a sheet every time they wash their hands, is there some other way to monitor behavior? Some people just don't get how important this is.
Isn’t that crazy that people don’t see value in washing their hands? Making people sign off on a sheet would probably raise awareness, but some would find it annoying and for those that only washed quickly with water and not with soap will probably spread more germs by using the communal sign-off pen. Behaviors are so ingrained that it takes a lot of signage and reminders to encourage those individuals that never had good cleaning habits to step-up. Probably peer-pressure has the biggest effect. If co-workers are encouraging clean habits and not just management then you would probably see faster acceptance. Maybe instant hand sanitizers that employees could ‘check-out’ during each shift and carry in their pockets as a reminder that clean hands should happen more than when they just used the bathroom. When I see someone using instant hand sanitizer it always reminds me to grab my bottle.
