I was in Yellowstone National Park working both before and after the fire in 1988. I was even down there two weeks visiting friends before it broke out.
When I came back we went through a lot of fire safty classes and even had the National Forest Service Fire Marshall in my kitchen asking me point blank questions on how do I do this, when would I do that.

I just posted a video about kitchen fires.

Great video clip! being calm is the most important thing, nowyou can have a great visual of what NOT to do!
No one should be allowed in the kitchen that does not know how to extinguish an oil fire.

The first section of this short clip shows how simple it is... the second how dangerous it can be and unfortunately the person in the video found out the hard way.

Last year I was called on to put out a domestic fire where a bottled GAS heater was on fire. The flames were already hitting the ceiling, the next door neighbour was drunk and I used the same method (as I had been trained to do over 30 years ago) as this clip shows - only I used the largest bath towels I could find - 4! just to smother the flames to the point where I could cool the handle and turn off the GAS (after checking my conscience and trying to estimate if it was still safe to approach the fire!!!).

It was the first time in over 30 years I have been called to use that training - but I AM sure glad I received it!
