Working in both the healthcare and foodservice industries, I believe that safety and sanitation are the most important thing in the kitchen. It comes before taste for me. I would rather have good safe food rather than great unsafe food. To have great safe food is the ideal.

Sanitation is misspelled. If we want to search engine optimize this discussion the spelling needs to be edited. If we want members of fohboh.com to find this discussion using the search features the word 'sanitation' must be spelled correctly.
