I like my Beef Carpaccio, shown above...I got tired of seeing the standard 'flat' carpaccio, so I simply gave it some height and then topped it with baby arugula, shaved Pecorino and drizzled it with freshly made basil oil and a sweet & peppery balsamic reduction
