My Irish Cook Books have been written by Myrtle Allen, Monica Sheridan and Theodore Fitzgibben and Gorden Ramsey.
I like to read about the history of Irish Food, there is not much information available but our food history is similar to English Food ingedients young Irish Chefs have created new version's of all of theses dishes
I would recommend all Darina Allen cookbooks, she modernized Irish Cuisine to to a very high standard
