So I am pretty new to this site, but I have an issue that came up recently with one of my clients.

 

Do female bartenders actually generate more revenue for a business? Either from a check average stand point, or from head count?

 

I ask because based on my experience (and my colleagues) there is no validity to the old myth. However, my client insists that it does. I am looking for any empirical data to back this up so that he can avoid an EOE lawsuit in the future. From personal experience it seems that competence and personality are the two largest determining factors in a successful bartender. But if anyone knows anything different I would love to know.

Tony, you are asolutaly corect, Competance and personality are the main attribution, to sales and the return of customers, I have been in the hospitality bussines and those are the quality professionals look for. By the the way there is no old myth, it has always been as stated. Giuseppe

The topic "Female vs Male bartender" is really a good topic as many of the people in this service are also trying to find the answer to this question. I believe being a male or female bartender will not issue the business as it is a designation which should have salesmanship and  the passion to contribute to sales.

Hey Tony, if you'll notice you've had a few people check out this post, but even less want to reply :) That's not because your question isn't a good one, but it enters the whole "Taboo" zone.

The reality is, the only way to determine whether or not a male or female bartender is going to generate more revenue is by reading your clientele. But at best that's very subjective.

I recently had a group of guys (about 20-25) that have been coming to our sports bar every Monday night for beer and wings for a couple of years now, stop coming in. And as it turned out it was because we switched bartender schedules for that night and they "just didn't like a dude serving them". 

However, when these same guys came in throughout the week, they think this same male bartender is the best! They love him!

As a group, they wanted "Eye Candy". Right or Wrong, that's not the debate here.

The point is, you have to read your customer base and decide who will "Gel" or "Mesh" well with the crowd during that shift. Occasionally that will have something to do with what their sex is, unfortunately.

On that note, your first instinct is certainly the best way to judge. Personality and Competence ARE the two largest determining factors. Hands down.

No matter how much you try and read your crowd and try and figure out who may fit best, if they have little personality and their competency level sucks, that person is harming your business not helping it.

Another story for you that throws a wrench into answering this question for you. I know a female bartender at a friends bar and grill who isn't the "Eye Candy" type if you will. Yet this girl makes more for the business than the other servers and the owner combined! She has earned her regulars through mastering the fundamentals of service and exceptional public relation skills, and makes it clear to everyone she serves every shift.

She has built up relationships with countless neighborhood people who come  just because of her. The most ironic part is...she doesn't even know that she's doing it! It's just her personality.
