Competing against the national chains..... what is your plan of attack?

I am interested in finding out what local, independent restaurants do, marketing and operations-wise when a national or regional chain opens in your neighborhood.  As a small company who services the hospitality segment exclusively and local independents by choice - I see this happen often and have seen some great ideas (and some silly ones) developed when the competition comes to town.

You all have the knowledge, please share it...
