Are restaurants able to see a ROI on the philosophy of " local and sustainable"?

Just wondering...seems being LEEDs certified is a great thing for the environment and probably the right thing to do. But, do customers really care? Do they even know you have taken the steps to be green? Does it really matter and with the added costs, what is the ROI?

 

Curious what those who have focused on local products, implemented green policies and are practicing sustainability have to say.
