I don't eat pork, but I just saw a great recipe on a food blog that involves cooking a porkloin:
First, mix a rub with 1/2 dark brown sugar and coffee, and then apply it evenly to the porkloin. Put the porkloin in a 1 inch baking pan. Pour a litre of Cherry Coke over the porkloin and place it in the oven. Bake in a 350 degree oven until the internal temperature reaches 155 degrees and you're done.
I've never considered cooking with a Coke product before, but if I were going to eat pork, this would be the recipe I would try.
Oh, I have cooked with Coke before. Great flavor and tenderizer. There are a lot of people that use Coke, 7-up and Dr Pepper in their BBQ Sauce as well. It's a new fad/trend. It's just like adding Jack Daniel's or your best beer to a sauce or Chili! Yummy, so good!
In the deep south there's a long-standing tradition of doing baked ham with Coke.
Typically, the ham is basted with cola as it cooks. Some of the cola is mixed with brown sugar and used as a glaze during the final 30-60 minutes of baking.
