Is there a better way to maintain a grease trap than to just suck it out with a shop vac when it gets full.
My staff just hates to clean it,so it will be neglected for far too long and stinks something aweful.

Simplicity is the sign of perfection. I would first recommend that you hire a professional for this service as to insure that your establishment stays compliant with all local & state regulations. However, if you undertake the responsibility of compliance in house I would recommend increasing the frequency of cleaning to reduce the odor. If the odor is still an objection, try nose clips.....? Proper maintenance is costly, but not as costly as neglect.
