What's your favorite utensil or appliance in your kitchen?
Or what is the most valuable piece of equipment to your restaurant?

Just curious---
I don't work in a kitchen anymore but I wouldn't ever be able to live without my cast iron skillet!

I can't cook anything at home without my hinged tongs! It sounds ridiculous, but I have a shorter pair (three to be exact) and they are great for EVERTHING!

I hear ya on the whole cast iron skillet. I have a smaller one that is an antique and it makes the best scrambled eggs on the weekends.
That's not ridiculous! Not only are they required in the kitchen but they are the best camping cook tool around!
My lovely new ceramic Chef's knife.
I could be a little snotty and say it's my hands, but it's really the extension of my hand, my ErgoChef knives.

Yes, I know, you've never heard of them. Lots of people haven't. Picture if you will a top-of-the-line Wusthof, redesigned to be easier on your wrists, better balanced and more ergonomic.

Definitely my grandmother's avocado green Kitchenaid stand mixer. It's a workhorse, and I think all of the memories I have of her using that mixer make everything taste that much better.

In my cafe, I'd have to say my espresso machine and my panino press. They're both Italian -- very well made, and heavy steel. No flimsy parts, and they work so well - I'd be sunk without them.
I would have to say my cork screw and my cook's knife.
The three things I use everyday that I love are...
My chef's knife (Masamoto)
My Spring cast iron pans
Vita Prep Blender. It really is awesome!
My coffee grinder and my coffee maker!
My Evo Flattop Grill. That's me int he background. I have two flllets of Salmon cooking on there.

Two: a mexican lemon squeezer that my sister in Tx sent me and a Braun immersible blender that I found at Marshall Fields a few years back, out of the box, half price. Both have become quite indispensable.
