I have noticed that more and more restaurants are providing gluten free options to their customers. This is close to my heart for I was gluten free long before people knew what it was.
I was in a fine dining establishment a few years ago and asked the server about gluten free options and she indicated that she would go and speak to the chef. Upon her return she informed me and my dining party, "the Chef told me that we do not use glue in any of our dishes." I can not tell you the level of trust that afforded me for the meal to come.
Does your restaurant offer gluten free options and does your staff comprehend that for some gluten free should be treated like any other allergen?
On a personal note, I will be in Baltimore, MD next week and wonder, do you have any suggestions for lunch and dinners?

I am sorry to be laughing, but that is one of the funniest "gluten" stories I have heard. It is however no laughing matter for those who are celiacs. You are right things have improved over the last decade. You can find many stores with at least one aisle dedicated to gluten free products. It is still a challenge in most restaurants, but at least (I hope) none are mistaking it for glue. :)
Ahaha.. this is so funny..but for those who don't know what "Gluten-free diet" means --- It is a diet completely free of ingredients derived from gluten-containing cereals: wheat (including kamut and spelt), barley, rye, and triticale, as well as the use of gluten as a food additive in the form of a flavoring, stabilizing or thickening agent.
As a follow-up to this discussion, I made my trip to Baltimore last week. It was wonderful though a little warmer than I would like.
I visited a few good restaurants while there and here are the ones that did a great job at meeting my gluten free needs:
*Labenese Taverna (gluten free menu)
*Roy's (gluten free menu)
*Ms. Shirley's Cafe
*Kali's Corner
*Riptide by the Bay (in Fells Point)
All the food was great and it was really fun to eat steamed crab for the first time.
