Hi,
we serve a lot of grilled food and we primarily use gridlle plate and charcoal grill.These have been locally fabricated. We wanted to upgarde and buy a BBQ grill from http://www.napoleongrills.com . My question is that equipment like this..is it suitable for a restaurant. Whats is the holding time of grilled food and production capacity. r are these suitable for individuals only. We wanted to use a gas with lava stones with a capacity to smoke the meat. Which wood is more suitable for chicken hickory , maple wood. Any thoughts!!

As far as I know insurance limitations would exclude the use of a residential piece of equipment being used in a restaurant. Commercial equipment must have certain approvals form NSF and NFPA to be used in a commercial venture.

Well, you serve a lot of grilled food and you thats what customers are paying for. Grill food is usually to order, and the production time depends on you. When it come to the wood you have that choice becasue of the taste in food you are establishing. You also have to check for the codes in your city/county that would alllow this type of equipment. There is also a certian amount of square footage that you have away from the establishment as well.
