HELP!!!!! I was just handed a super heavy duty 20k pasta machine/extruder for the kitchen I work in. The new owners want to make fresh pasta daily. No problem...well except that none of my recipes seem to work. All the recipes are designed for rolled not extruded pastas and what I am ending up with is a sticky heavy mess that shreds in the boiling water.
Is there anyone out there with a good basic recipe for spaghetti and linguine that will work for this type of machine. It works 30 plus pounds of dough at a time.
Please help!!!!!! We open in 8 days and I have to figure this damn machine out.

Jeffrey, I would find out the name of the machine and search the company online to see who their distributor is in your area. Call them and they will be happy to help you. If you can't find a distributor call a local food service equipment dealer in your area to help you find the Mfg.Rep for the company.
