I can't understand why the Nobel Prize committee doesn't yank the award back from its last recipient and give it to New York chef Tom Colicchio instead for his economic brilliance. The co-founder of Gramercy Tavern and current chef-owner of Craft has hatched one of the best ideas the industry has seen in some time for boosting sales.

Granted, it may not be applicable to the neighborhood Applebee's. But it's delivering a nice lift to sales on Tuesdays, hardly the week's sales peak.

You're right - clever and well targeted- he knows who his customers are, what they want and how to deliver. And when your customers don't really worry all that much about dropping that kind of money on a Tuesday night for dinner, why not? The best ideas are so often simple - this seems simple to me - figure out who your market is (shouldn't be that hard!) and go after it with something that will make them feel special.
