I'm researching ingredient trends for the upcoming year and was wondering what people thought might be finding it's way on to menu's next year. For example, maybe things like less expensive cuts of beef like short ribs or beef cheeks to help offset rising costs. Any thoughts welcome.

With the rising costs across the food chain, I've been hearing that meats will become more expensive, so certainly less expensive cuts will continue to gain popularity. Sea salts and other "exotic" salts seem to be gaining favor - see my blog- "The Salt of the Earth" - despite the connection between sodium and cardiovascular disease. Farm-raised fish also has made its way onto more menus.
As soon as I posted, I received a press release from Mintel, a research firm, reporting large surges in the number of energy drink drinkers- so there's another trend. The number of adults consuming energy drinks rose from 8 to 15% in the past year and 35 % of teens now consume energy drinks daily.
