Starting up a pizzeria does not sound like it will be difficult but I know it is. Anyone willing to share some of the biggest surprises they encountered as they opened up their first or 51st unit? and how did you address it or whom did you turn to for help?

Hi Doug,
Ray and Howard bring up some really great points. Let me address the issue of ownership first. If you have a partner or partners, be extremely cautious! Get your resipe's agreed upon, get all agreements in writing and never take for granted that they are looking out for your intrests. Nothing will destroy a friendship faster than partnership.
If your site is picked, monitor the traffic flow and make sure that that flow matches the demographics of your target audiance. Don't resign yourself to the 'if you build it they will come' approach. That's part of the reason so many restaurants fail.
If you're renting, try to get a deal that doesn't hit you durring slow times. If you have the cap room to pay in advance by 6 months or a year, you won't have to worry about that bill if you find yourself struggleing. Make sure that the landlord is responsible for providing adaquit heat and air because if your building wasn't a restaurant, you're going to need to double your AC capacity.
As far as purchasing equipment goes, by used whenever possible (sorry Howard). Auctions, online, and local trade flyer publications are a good start. Restaurants close all the time, network to find one that you might be able to do business with.
Make friends with your plummer, electrican, painter.....anyone that does work in your building. They are key to your peace of mind as your plan comes together.
Price point is key. There are a ton of pizza joints that sell crap, but it's $5 crap. The quality of the ingedients that you choose determine your target market. Don't get caught in the $5 trap, they will just wait you out of business.
If you're going with a canned tomato, for consistancy, La Bella brand San Marzano tomatoes are the absolute best!!!!!! Google it and you'll be directed to the site run by Nick Soccodato. He's got the goods! He and his daughter Lena run the online bisness. I've met them both and they are great people dedicated to promoting the best tomato available. I've got several dozen cases as well. If you would like a small order, I can accomdate so that you can test it.

There are many struggles when you put up a business. however if you believe that you had the edge in pizza industry then pursue the spirit to go strong whatever difficulties there are. Succeeding in a food business is not an easy idea but along with the delicious pizza, you are the first to believe in the product that you are serving. Positive outlook is the key.. :)
