Never serve your customers something that you wouldnt serve your family or yourself.
Weve all had the case of squished tomatoes, wilted lettuce, or milk that shouldnt see the back of the vendors truck...let alone be delivered to our restaurants. Some owners and chefs wont hesitate to send stuff back with a stern warning about the lack of quality...some will take the "iffy" goods and serve it to unsuspecting customers, sad to say.
If it isnt okay for you to eat it, why would you serve it to someone else?
